Mmm...Tuesday? Campari and Apricot
I’m a day late, but hopefully not a dollar short. I HATE being a dollar short.
I was out with some friends recently at the appropriately named Drink in Boston’s Fort Point neighborhood. The bartenders there are known for their extensive knowledge and skill, so I try to order concoctions I can’t make at home.

On this particular evening, I couldn’t decide what I wanted, so I told the bartender I wanted something with gin, not too sweet, but “easy-going.” He confirmed that I liked Campari, and moved off to whip up something special. He returned with this gorgeous corally-pink beverage. Apparently, it’s Campari, Beefeater Gin, and apricot, finished with a rub of lemon peel on the rim. I don’t know the recipe, but I do hope that bartender remembers how to make it next time I’m thereā¦

This is crazy! Just this past Friday I was combing the interwebs for a cocktail that included apricot and gin!! What are the chances? Anywhoo, I canned up some incredible apricot nectar this summer and I’m always in the mood for gin (I seem to remember you and Brandy teaching me to drink it — I complained bitterly). Also - the added bonus of being delicious even without the gin (for my pregnant dinner hostess). And I didn’t have to play bartender all night! It’s going to be a go-to for next summer for sure.
